Looking out of the windows of our aparthotels here in the Eisacktal valley, it’s not just the Dolomites and the Meransen church steeple that catch the eye. You can also see our busy-bee neighbours bending over in their strawberry fields – the sweet little fruits are finally ripe for picking and tasting!
We can’t resist this heavenly summer treat… and we love to share it with our guests, of course!
Besides, the Kösslerhof strawberries are not just a bright-red eye-catcher – they are above all a feast for the palate that we are proud to add to our menu of local delicacies. One bite, and summer can’t get any sweeter... or can it? Well, there’s only one way to find out: here is the recipe for our strawberry tiramisu. Give it a try!
- 160 g curd (quark cheese)
- 160 g plain natural yogurt
- 1 sachet of vanilla sugar
- The juice from half a lemon
- 70 g icing sugar
- 150 ml cream
- 160 g sliced strawberries
- 200 ml naturally cloudy apple juice
- 1 packet of sponge fingers
- 100 g strawberries for garnishing
Wash the strawberries, remove the stalks and slice the fruits. Mix the curd cheese, yogurt, vanilla sugar, lemon juice and icing sugar and blend until smooth. Whip the cream and stir it into the curd-yogurt mixture along with the sliced strawberries. Give the sponge fingers a quick dip into the juice (or orange juice), place them in a baking dish and cover them with the mixture. Repeat the process for two more layers. Garnish the tiramisu with the remaining strawberries, refrigerate and serve.
